Roasted Veggies with Beyond Meat Italian Sausage 😋

This is one of my favorites and it’s super easy. We ate it for 14 days straight we were so in love!

Here’s what you need:

  • Cabbage

  • Chopped Butternut Squash

  • Broccoli

  • Mushrooms

  • Beyond Meat Italian Sausage

  • Worcestershire Sauce

  • Liquid Smoke

  • Sea salt, pepper, garlic

  • Olive oil


Pre-heat oven to 400 degrees.


Shred the cabbage. Remove the super hard stems. Layer on baking sheet.


Next, slice the mushrooms and layer on top of the cabbage.


Chop broccoli and layer on top. (You can buy this pre-chopped to save time).


The next layer is the butternut squash.


Now lightly drizzle olive oil over the veggies. Use your hands and help spread the oil around. Yes, you are going to touch your food. I use this time to pour good intentions into my food and connect to it, asking it to keep me strong and healthy.


Then season the veggies.


Take the Worcestershire Sauce and drizzle this over the sauce along with the liquid smoke. A little goes a long way.


Now slice the sausage and put that on top of everything. As it cooks, the oils and flavors will season everything else.


Roast for 30-45 minutes. You’ll know it’s ready when its browned on top and a fork can go through the squash.
